Bakesale bakers baking help !!!?

I am 13 and trying to rake responsibility and earn my own money for the summer being that I am too young for a job . I LOVE to bake , not little girl baking either ... I can bake , ice , fondant and pipe in such a short time ! I just have problems making my own cake ( I don't know how to make like rasberry cake from scratch ) anyway I wanted to go to my local mall and have a bakesale on July 1rst , I would have some 4th of July goodies. And breast cancer supporter pretzals ... How do I make the pretzals stay soft for a long time ? They usually turn into hockey pucks after an hour ? ANYWAY help me ? Do I need a permitt ?how should I do this ???????? Please help me plan it out!
